What is apple cider vinegar?

Apple cider vinegar is made from the fermentation of apples, which is made by bacteria of the genus Acetobacter. It has a characteristic golden colour and apple aroma.

Apple cider vinegar has many health-promoting properties, but many myths have arisen around the effects of its regular consumption. The fact is that it has a positive effect on carbohydrate metabolism, as proven by studies on people with diabetes.

1-2 tablespoons of vinegar mix with boiled water (approx. 200 ml) and drink instead of tea. If you add a teaspoon of honey, you will create a super-nutritious power drink that is worth having a good start to the day, and after half an hour to have breakfast. Such a mixture will provide active compounds derived from apple cider vinegar and honey; used long enough to improve the work of the whole body. It was already known in ancient times.

The acetic acid contained in apple cider vinegar destroys bacteria, fungi and viruses. However, claims that apple cider vinegar lowers cholesterol, suppresses appetite (thereby facilitating weight loss) and improves cardiovascular function, are not confirmed by research.

Externally, apple cider vinegar has traditionally been used for headache compresses, in addition to home-made preparations for skin imperfections, such as blemishes and pimples, to relieve swelling in the legs and sunburn, with sprains, varicose veins, pharyngitis, cough, improving the condition of hair and skin.

When the fruit breaks down, fermentation occurs and weak alcohol is formed, which in contact with bacteria and yeast in the air turns into vinegar. So, if you put the fruit must in a closed container (and meet some additional conditions), you will get wine; if you leave the container open, you will receive vinegar.

To make vinegar, you need apples without spraying, from a familiar orchard or bought at the market – if they are wormy, with growths, spots, of various sizes, those are the signs that the trees were not sprayed.

A lot of bacteria and yeast are found on the skins of fruit, so you should not thoroughly wash the apples harvested from the orchard. If they are broken from branches, they are clean; if you collect bleeds, gently wash them and remove any broken or wormed places.

If the vinegar is weak, you can throw apple skins or shredded apples into it again and perform the whole process from the beginning – first alcoholic fermentation, then vinegar fermentation. It will take a few weeks.

If you haven’t succeeded in vinegar, put orange peels into it and macerate for 2 weeks – you can use such an aromatic product to remove scale e.g. from bathroom faucets or tiles.
