Grilled vegetables are an excellent alternative to grilled meat. For people who do not like or do not want to eat a grilled pork, making skewers of zucchini, squash, peppers or onions is a good way out.

Vegetables prepared on the grill are subject to a short thermal treatment, so there is no loss of vitamins and minerals in them, which can be quite big when cooking vegetables. Grilled vegetables can be used to compose a tasty salad or they can be eaten individually with the addition of spices and herbs.

Grilling, however, has its drawbacks, and the biggest is the production of dangerous compounds for our body during this type of thermal treatment. One of them is polycyclic aromatic hydrocarbons (PAH). These are derivatives of benzene. They arise when burning food at high temperature. If the vegetables are grilled in the presence of meat, the risk of contamination with these compounds is greater, because the more fat falls into the heat, the more such compounds get into the vegetables.

Other compounds that arise from the combustion of coal and smoke get into food are dioxins. They are mutagenic and carcinogenic.

Starchy acrylamide, which affects the development of cervical and ovarian cancer, is produced in high starchy foods under the influence of high temperature.

Steamed vegetables do not lose their flavor, retain taste and color and, most importantly, do not lose valuable ingredients. They are not soaked with water, so they taste better. They are more easily digestible than those fried or baked. Their other advantage is the low calorific value, because you do not need to add fat to them. Vegetables prepared with steam do not require the addition of salt, which is their next advantage.

Preparing a steamed dinner is a way to have a quick meal, and in addition does not require a lot of cleaning.

The disadvantages of steamed vegetables are hard to find, everything speaks for the fact that eating them is healthy and tasty.

Choosing between steaming and grilling and guided only by health issues, we should choose steamed vegetables. They are healthier because they do not contain harmful substances. However, we must also take into account that eating grilled vegetables can be used sporadically, and eating them from time to time will not adversely affect your health.
